Tropical Chia Pudding

Ingredients:   ¼ cup chia seeds  1 cup full fat coconut milk  1 teaspoon vanilla extract  1 tablespoon maple syrup or 15-20 drops stevia

Ingredients continued:    Pinch salt  1 mango, chopped  1 banana, sliced  ¼ cup coconut chips

Mix chia seeds and coconut milk. Let sit for about an hour. Add vanilla extract, maple syrup or stevia, and salt. Mix well.

Layer coconut chia pudding with chopped mango and sliced banana into two bowls.
