Vegan Black Bean Nacho Burger
Ingredients: 1 cup chopped onion 1 tablespoon olive oil 1 clove garlic 1 serrano pepper 15 oz. black beans 1 cup rolled oats 1/2 cup sunflower seeds
Ingredients continued: 1/2 teaspoon chili powder 1/2 teaspoon cumin 1/2 teaspoon Mexican oregano 1/4 teaspoon paprika salt and pepper 4 buns
Nacho Cheese Sauce : 14 oz. silken tofu 1/2 cup nutritional yeast 5 tablespoons green chiles, divided 1 teaspoon turmeric 2 tablespoons corn starch 1/2 teaspoon chili powder
Nacho Cheese Sauce continued: 1/4 teaspoon paprika 1/4 teaspoon cumin 1/4 teaspoon cayenne pepper 1/4 teaspoon salt 1/2 cup salsa
Saute onions until translucent. Add garlic and serrano pepper. Cook about a minute. Place all ingredients in a food processor and mix until smooth.
Refrigerate for an hour. Form into patties. Bake for 20 minutes @ 400°. Flip, and bake another 20-25 minutes.
Nacho Cheese Sauce: In a food processor, mix all ingredients except salsa and half the green chiles.
Pour in a pan and heat until it thickens. Add salsa and the rest of green chiles.
