Vegan Mexican Shepherd's Pie

Ingredients:   1 cup chopped red onion  1 tablespoon olive oil  ¾ cup chopped red pepper  ¾ cup corn 15 ounces black beans  ½ teaspoon chili powder

Ingredients continued:  ½ teaspoon Mexican oregano ¼ teaspoon cumin ¼ teaspoon cayenne pepper Salt and pepper  ½ cup salsa  Whole batch Chipotle Mashed Sweet Potatoes*

Preheat oven to 425°. Add olive oil to a hot pan and cook onions on medium heat until translucent. Add red pepper and cook until crisp tender.

Add corn, black beans, spices, and salsa. Cook a few minutes until salsa cooks down. Pour black bean mixture into a 9 ½" x 7 ½" baking dish. Spread Chipotle Mashed Sweet Potato on top.

Bake at 425° for 15 minutes, then broil for 5 minutes.
