Vegan Nachos

Ingredients: 6 cups tortilla chips 1/2 batch tofu nacho cheese sauce 1/2 cup spicy tofu 1/2 large avocado 1/4 cup Kalamata olives 1/4 cup cherry tomatoes 1/2 jalapeño

Tofu Nacho Cheese Sauce:  14 ounces silken tofu  ¼ cup nutritional yeast 5 tablespoons green chiles divided  1 teaspoon turmeric  2 tablespoons cornstarch

Ingredients continued: ½ teaspoon chili powder ¼ teaspoon paprika ¼ teaspoon cumin  ¼ teaspoon cayenne pepper  ¼ teaspoon salt  ½ cup salsa

Spicy Tofu:  1 cup chopped onion  1 tablespoon olive oil 1 clove garlic minced  14 ounces extra firm tofu crumbled into small pieces  1 teaspoon chili powder 1 teaspoon cumin  

Ingredients continued:  ½ teaspoon paprika ½ teaspoon cayenne pepper  ½ teaspoon Mexican oregano  6 ounces tomato paste  ¼ cup salsa salt and pepper

Tofu Nacho Cheese: Mix ingredients with half of the green chiles. Pour in a pan and cook on medium heat until it thickens.

Tofu Nacho Cheese continued: Add in salsa and the rest of the green chiles, and cook a couple of minutes longer.

Spicy Tofu: Cook onions until translucent. Add garlic and tofu. Cook 5-10 minutes. Add herbs and spices, tomato paste, and salsa.

Nachos: Layer ingredients on a parchment lined sheet pan. Bake at 325° for 10 minutes
