Vegan Peppermint Patties

Ingredients: Filling – ½ cup sweetened condensed coconut milk – 2 cups powdered confectioners sugar – ½ teaspoon vanilla extract – 1 teaspoon peppermint extract

Ingredients: – Pinch salt – 2 tablespoons coconut oil Chocolate Coating – 12 ounces dark chocolate chunks (2 ¼ cups) – 1 teaspoon coconut oil

 Filling: Mix filling ingredients. Place in the fridge to harden. Line a baking sheet with parchment paper. Form filling into balls, then flatten and place on parchment lined baking sheet.

 Freeze 1-2 hours. Chocolate Coating: Melt chocolate in a heatproof bowl over a saucepan with a couple of inches of water, stirring constantly.  Add coconut oil and mix well.
