Vegan Strawberries and Cream Popsicles

Ingredients: 13.5 ounces full fat coconut milk 1 teaspoon vanilla extract 1 cup chopped strawberries

Pulse all ingredients in a Nutribullet or food processor to leave strawberries a little chunky, or mix well to purée. Pour into 3 ounce bath cups.

Put a popsicle stick into each one and freeze until solid. To get the paper cup to release easily, pour hot water into a shallow container and put popsicle in it. It should slide right off!
