Vegan Taco Salad

Ingredients: 1 tortilla - I used brown rice 1 ½ cups chopped lettuce ½ cup Spicy Tofu 6 chopped cherry tomatoes

Ingredients: 4 sliced Kalamata olives 2 tablespoons guacamole  ¼ cup salsa Handful cilantro

Preheat oven to 350°. Heat tortilla for 30 seconds to a minute in microwave so that it's pliable. Brush tortilla bowl maker with olive oil. Place tortilla in tortilla bowl maker in oven.

Bake at 350° for 6 minutes. Let cool and place tortilla on a plate. Fill tortilla bowl with chopped lettuce, tofu taco filling, cherry tomatoes, Kalamata olives, guacamole, salsa, and cilantro.
