Sauce: Soak macadamia nuts in water for a couple of hours. Drain water.
Mix all sauce ingredients in a food processor until smooth and creamy.
Noodles: Heat pan and add olive oil. Add spiralized carrot. Cook for about a minute or two, then add sweet potato noodles. Cook until noodles are tender crisp. Alternatively, you could steam the veggie noodles.
Add sauce to pan and cook to combine, about a couple of minutes. Garnish with cilantro.
