Balsamic Reduction: In a saucepan combine sugar and balsamic vinegar. Bring to a boil, then simmer for 15-25 minutes, depending on how thick you want it. The longer you cook the reduction, the thicker it will get.*
Core the apple with about a 2" diameter - if the hole is smaller, you will taste mostly apple instead of the other ingredients.
Stuff the apple with 1 tablespoon of balsamic reduction, spreading some all around the inside edges.
Next, stuff the apple with one pinch each of cinnamon and nutmeg, and I teaspoon each of the pecans and cranberries.
Spoon the rest of the balsamic reduction on top of pecans and cranberries.
Top the balsamic reduction with the rest of cinnamon, nutmeg, pecans, and dried cranberries.
Bake the apple in a dish with about an inch of water at 350° for 35-40 minutes.
