This light refreshing Cucumber Mojito is perfect for a hot Summer day. It is easy to make and sure to impress!

- 2 oz. light rum
- 2 tablespoons lime juice
- 4 mint leaves
- 1/2 cucumber (1/2 cup)
- 1/2 teaspoon agave syrup
- 1/4 teaspoon sugar
- club soda
Muddle mint leaves in sugar until a paste forms. Set aside.
Blend cucumber, rum, and agave syrup. Put through a metal strainer. Pour over ice.
Mix in mint leaves and sugar. Top with club soda.
