Brush tortilla with olive oil on both sides. Bake at 325° for 5 minutes on a wire rack, or until slightly crispy*.
Sprinkle grated vegan cheddar on tortilla. Arrange sliced green chiles on top. Bake at 325° for 5-10 minutes more, or until vegan cheese is melted, but not so long that tortilla is charred.
Serve with vegan sour cream.
