Avocado Cilantro Lime Dressing: Blend ingredients until smooth.
Black Bean Quinoa Salad:Rinse quinoa thoroughly. It has a coating of saponins, so the quinoa will taste bitter if not rinsed. Heat a pan on the stovetop. Add quinoa and toast for a few minutes (optional). Add water and bring to a boil. Reduce to a simmer, cover and cook until all the water is absorbed, about 10-15 minutes.
Chop cilantro, tomatoes, avocado, onion, pepper, and jalapeño. Put in a bowl with the quinoa.
Add corn, black beans, salt and avocado cilantro lime dressing. Mix thoroughly.
