Peel cucumber and cut off ends. On a mandoline, set the blade for 1/16" and slice the cucumber lengthwise. Alternatively, you could use a large vegetable peeler.
Spread sun-dried tomato and basil hummus on the whole slice of cucumber - not too thick.
Next, spread sun-dried tomato basil pesto on top of hummus.
Roll starting at the small end of the sliced cucumber. Stick a toothpick in, and repeat with the other slices.
