Add olive oil to a hot pan. Add chopped onions and cook on medium heat until translucent.
Add shredded jackfruit, cauliflower rice, salsa, and seasonings. Cook about 10 minutes until the salsa is cooked down and the jackfruit and cauliflower rice is heated through.
Spoon some of the jackfruit mixture onto a tortilla along with some salsa. Fold the sides in and roll tightly away from you. Serve with Lime Crema.

If you prefer, this burrito would also go well with homemade guacamole or vegan sour cream instead of Lime Crema.
