Mix all ingredients in a food processor. Spread mixture on a teflon lined dehydrator tray. Spread it about ⅛" to ¼", but make sure you can't see through it. If it's too thin it will have holes in it.
Dehydrate at 110°F for 8 - 12 hours. The fruit leather is done when it's completely dry and slightly sticky to the touch. Use a butter knife to lift the fruit leather off the sheet. You should be able to peel it off the Teflon sheet easily.
Slice into 1" strips. If desired, you can cut parchment paper the same size as the fruit roll-ups to roll them in.

Store in a cool dark location in an airtight container for up to a month.
