Instructions
Place pecans in a food processor. Mix until finely ground. Reserve ½ cup.
Add sweetened condensed coconut milk and salt. Mix until well combined. Place in the freezer for 1 hour.
Roll mixture into balls. Freeze again if they melt.
Roll pecan balls in the reserved ground pecans. Store in the freezer for the best consistency.
Notes
These truffles will last for several months in the freezer.
