Wipe mushrooms with a damp towel. Remove the caps off the mushrooms and scoop out the gills. Brush the mushroom caps with olive oil. Bake at 400° for 7 minutes. Drain the water out of the mushrooms. Season with salt and pepper.
Stuff each mushroom with ¼ cup hemp seed cauliflower rice pilaf, and bake for another 5-7 minutes, or until mushrooms are tender.
