Slice apples into large slices and dehydrate at 110°F for 24-36 hours, depending upon the size of the slices. If you do not have a dehydrator, you can purchase dehydrated apples with no preservatives at most natural food stores.
Pit and soak dates in hot water.
Mix all ingredients in a food processor until ground.
Form into balls. To make handling the mixture easier, you may want to refrigerate it first. You could also add more dates, if needed.

These apple energy bites will last up to a week in an airtight container in the pantry or several weeks in the fridge and up to 3 months in the freezer.
