Cranberry Apple Chickpea Salad Sandwich
This sweet and savory Cranberry Apple Chickpea Salad Sandwich is perfect for a potluck or a light lunch.
- 15 oz. garbanzo beans (chickpeas)
- 1 apple I used Gala, chopped
- key lime
- ¾ cup pecans chopped
- ¾ cup dried cranberries
- ¼ cup grated carrots
- salt to taste
- 16 slices gluten free bread
Cranberry Lime Dressing: Mix all ingredients until smooth and creamy.
Chickpea Salad: Drain and rinse beans. Set aside in a bowl.
Add juice of the key lime to the chopped apple so that it keeps its color.
Mix the dressing and the rest of ingredients in with the beans. Serve on toasted bread or by itself.
