Roasted Garlic Hummus

Roasted garlic adds a sweet mild flavor to this creamy Roasted Garlic Hummus. It is easy to make and cheaper than store-bought!

Ingredients

  • 15 oz. can garbanzo beans drained and rinsed
  • ¼ cup tahini
  • ¼ cup lemon juice (1 lemon)
  • 1 head roasted garlic
  • ¼ cup water optional
  • 2 tablespoons olive oil + 1 teaspoon for garlic
  • salt
  • paprika (optional - to sprinkle on top)

Instructions

  • Preheat oven to 350°.
  • Cut the top off the garlic bulb and put in tinfoil.  Drizzle 1 teaspoon olive oil over the top. Roast at 350° for 50 minutes - 1 hour, or until caramelized.
  • After garlic cools, squeeze cloves out and mix with the rest of the ingredients in a food processor.
  • Drizzle olive oil and sprinkle paprika on top, if desired.
