Avocado Lime Crema: Blend all ingredients in a food processor.
Beanadilla: Cut potato into chunks, then boil until tender. Remove skin. In a food processor, blend sweet potato, chipotle in adobo, and adobo sauce until mixed.
Add spicy black beans and pulse until mixed, but not a super smooth consistency.
Layer sweet potato bean mixture on a tortilla, then put the other tortilla on top. Heat olive oil in a pan and cook quesadilla on medium heat until browned, then cook on other side.
