  • 2 tablespoons chopped onion
  • ½ teaspoon olive oil
  • ¼ cup chopped carrots
  • 1 teaspoon minced ginger


  • Steam carrots until tender.
  • In a hot pan, add olive oil and chopped onion. Cook until translucent.
  • Add ginger and garlic and cook a minute or so more.
  • In a food processor blend steamed carrot, onion, ginger, garlic, coconut milk, vegetable broth, salt, pepper until smooth. Reheat and serve.
  • Relish: Add olive oil and onion to a hot pan. Cook until translucent.
  • Add carrots and cook until tender. Add ginger and cook a minute or so more. Serve as a garnish on soup.
