Prepare soy curls by adding hot water to them and letting them sit for 10 minutes. Drain the water and they are ready to use.
In a separate bowl, mix vegan mayo and curry powder. Add soy curls, celery, Granny Smith apple, green onion, cashews, dried cranberries, and salt. Mix well. Serve over lettuce or in a sandwich or wrap.
Notes
If you squeeze lemon juice on the chopped apple it will help to keep them from browning.
