Add all the ingredients except the coconut to a food processor. Mix until a ball forms. Place in the fridge for about 30 minutes to an hour.
Using a tablespoon, scoop out the mixture and form a ball. Repeat with the rest of the mixture.
Roll balls in finely shredded coconut. Store in the fridge.

Soak the dates in hot water to soften them up.These energy bites will last up to 1 week in an airtight container in the fridge.If you want to make extra and freeze them, they'll last up to 3 months in the freezer.
