Line a square or rectangular container with plastic wrap or parchment paper. Mine was 6 ½" x 6 ½". (The larger the container is, the thinner the fudge will be.)
Place chocolate chunks and sweetened condensed coconut milk in a heatproof bowl over a pan with a couple of inches of water. This will act as a double boiler. (If you have a double boiler use that.)
Heat on low to medium heat until melted.
Add vanilla extract and salt. Mix well.
Pour into the plastic wrap lined container. Place in the fridge or freezer to set. It will take 2-3 hours to set. Once set, pull out the fudge by the plastic wrap. Remove the plastic wrap and slice on a cutting board.
Store in the fridge or freezer.
Notes
An 11.25-ounce can of Nature's Charm sweetened condensed coconut milk has 1 cup of Sweetened condensed coconut milk in it, so you'll use the whole can.If you use another brand or homemade, make sure to measure 1 cup.This fudge recipe will last up to 2 weeks in the fridge and 2-3 months in the freezer.
