- I used mesquite tortillas

avocado

tomato, sliced

- I used Chao Tomato Cayenne

Instructions
Mash avocado onto tortilla. Sprinkle salt on top. Add tomato and sprinkle a little more salt on them. Add lettuce and vegan cheese.
Heat olive oil or cooking spray on a pan over medium heat. Place quesadilla on pan. Cook until browned, flip, and cook other side until browned.
