Mix curry paste and coconut milk in a bowl. Set aside.
Grind peanuts in a coffee mill or food processor, or finely chop. Set aside.
After husking, coat corn with coconut oil and grill corn on a grill or grill pan. Turn corn after browned, getting grill marks on each side.
Dip corn in curry mix, then roll in ground peanuts. Salt to taste.

*This process can get messy. My recommendation is to only use the amount of ground peanuts needed for each cob, otherwise the peanuts get soggy. It may be messy, but trust me, it is worth it.
