Cut the top off the garlic bulb and put in tinfoil. Drizzle 1 teaspoon olive oil over the top. Roast at 350° for 50 minutes - 1 hour, or until caramelized.
After garlic cools, squeeze cloves out and mix with the rest of the ingredients in a food processor.
Drizzle olive oil and sprinkle paprika on top, if desired.
