Ingredients

of salt + more for the spinach

Splash of balsamic vinegar

Instructions
Heat 2 tablespoons of olive oil in pan at medium heat and add sliced onion. Stir the onion until it is coated with oil. Add salt and sugar.
Stir the onions every five minutes or so. Cooking will take about 35-40 minutes.
Add a small amount of vinegar to deglaze the pan about two minutes before cooking is finished.
Add spinach and salt, and mix in with the onions. Cook until spinach is wilted. Turn off the heat.
On a tortilla, layer half the amount of vegan mozzarella.
On top of the vegan mozzarella, add the caramelized onion and spinach.
Add the other half of vegan mozzarella on top, then the other tortilla.
Cook in olive oil until browned on one side, then flip and cook on the other side.
