Balsamic Reduction: In a saucepan combine sugar and balsamic vinegar. Bring to a boil, then simmer for 15-25 minutes, depending on how thick you want it. The longer you cook the reduction, the thicker it will get.
Skewers: Slice vegan mozzarella and watermelon into uniform bite sized pieces, about 1" x 1 ½".
Skewer the watermelon piece, pushing the watermelon to the end. Follow with a basil leaf, the vegan mozzarella, another basil leaf, and finishing with a watermelon slice.
Put skewers on a plate - either standing upright, or on their side. Drizzle with balsamic reduction.
