Ingredients
1 ¾
cup
gluten free 1:1 baking flour

tablespoons
beet root powder
1
teaspoon
baking powder
1
tablespoon
flax meal
or ground chia seeds
Pinch
salt
2
cups
soy milk
2
tablespoons
maple syrup
1
teaspoon
vanilla extract
Vegan butter
Instructions
Add all dry ingredients to a large mixing bowl. Whisk to combine.
Add wet ingredients and mix well.
Heat a griddle or frying pan on medium heat.
Add vegan butter. Pour about 3 tablespoonsful of batter onto the pan. Add 1 or 2 more pancakes depending on the size of your pan.
Cook until bubbles form, and the undersides are golden brown.
Flip pancakes and cook on the other side.
