Roasted Tomato Basil Dip
This rich creamy Roasted Tomato Basil Dip will be the hit of the party. It is easy to make with only 5 ingredients.
- 4 cups plum tomatoes
- 6 cloves garlic peeled
- ½ cup olive oil
- Salt and pepper
- 15 ounce can great northern white beans
- ¼ cup fresh basil
Preheat oven to 450°.
Slice tomatoes in half and put in a baking dish.
Put peeled garlic in with tomatoes, and drizzle olive oil over tomatoes and garlic.
Add salt and pepper.
Roast at 450° for 20-35 minutes on middle rack, or until caramelized.
After tomatoes and garlic cools, mix in a food processor with beans and fresh basil. Add more salt and pepper, and mix until well combined.
