dried cranberries

pumpkin seeds

roasted and salted peanuts

chocolate chips

Instructions
Preheat oven to 350°F.
Add all ingredients to a food processor except dried cranberries, pumpkin seeds, peanuts, and chocolate chips. Blend until smooth and creamy.
Fold in dried cranberries, pumpkin seeds, peanuts, and chocolate chips, reserving ¼ cup.
Oil a 7 ½" x 9 ½" (or similar size) baking dish or line it with parchment paper.
Spread mixture in baking dish. Top with the rest of the chocolate chips and push them into the bars.
Bake at 350°F for 40-45 minutes or until golden brown and a toothpick comes out clean.
Notes
These vegan blondies will last 3-4 days at room temperature in an airtight container, and up to a week in the fridge.
