Ingredients
Lime Cream

tablespoons
vegan sour cream - I used Tofutti

tablespoons
lime juice
Wraps

collard leaves
1
medium sweet potato
15
ounces
refried beans or black beans
¼
cup
onion
sliced
½
tomato
sliced
Salt and pepper
Chipotle Cream
(optional)

Instructions
Chop sweet potato into large chunks.
Pour cold water into a pan. Add sweet potato. Bring to a boil. Simmer 10-15 minutes or until tender. Let cool.
Lime Cream
Mix well to combine.
Wraps
Cut off the end of collard stem. Slit the thick part near the end in half so it is easier to roll.
Cut skin off potato and mash onto a collard leaf, leaving enough room around the edges to roll.
Spread refried beans on top of the mashed sweet potato.
Add chipotle cream, onion, and tomato on top. Sprinkle salt and pepper.
Fold the sides in and tightly roll away from you. Repeat with the rest of the collard leaves.
Serve with lime cream and chipotle cream, if desired.
