Mix filling ingredients. Place in the fridge to harden.
Line a baking sheet with parchment paper. Form filling into balls, then flatten and place on parchment lined baking sheet. Freeze 1-2 hours.
Chocolate Coating
Melt chocolate in a heatproof bowl over a saucepan with a couple of inches of water, stirring constantly. (You can also melt chocolate in a microwave at 30 intervals until melted.)
Add coconut oil and mix well.
With a fork, dip peppermint patties in the chocolate and place back on the parchment lined baking sheet.
Place in the fridge or freezer and store in the fridge or freezer.
Notes
Store candies in the fridge or freezer in an airtight container.These homemade peppermint patties will last up to 7 days in the fridge and several months in the freezer.
