In a mixing bowl add olive oil, herbs, and spices. Mix.
Slice tofu into long strips, about ¼ - ½" thick. Coat with marinade.
Place strips on a parchment paper lined baking sheet, and bake at 375°F for 20 minutes. Flip, and bake another 15-20 minutes, or until crispy on the outside.
