Chocolate Covered Peanut Butter Frozen Yogurt Bites
These sweet Chocolate Covered Peanut Butter Frozen Yogurt Bites are crunchy on the outside and creamy on the inside.

- Ice cube tray
Ingredients
Peanut butter filling
- 1 cup unsweetened coconut milk yogurt
- ¼ cup + 2 tablespoons peanut butter
- 3 tablespoons maple syrup
- ½ teaspoon vanilla extract
- Pinch salt
Chocolate coating
- 1 ½ cups chocolate chips
- 1 ½ tablespoons coconut oil
Instructions
Peanut Butter Filling
- Mix peanut butter filling ingredients in a bowl. Pour 2 tablespoons in each ice cube slot of an ice cube tray. Freeze until solid.
Chocolate Coating
- Heat a couple of inches of water in a saucepan or double boiler over medium heat. Place chocolate chips and coconut oil in a heat-safe dish over the saucepan. Stir to combine.
- Remove from the heat when there are no more lumps of chocolate and it's thoroughly melted. Don't cook it too long or let it touch any water or it will seize up and get hard.
- With a fork, dip a peanut butter yogurt bite into chocolate. Place on a parchment lined tray. Repeat with each yogurt bite. Freeze.

You can also heat the chocolate in the microwave at 30-second intervals.
These frozen yogurt bites will last for several months in the freezer.
