These vegan yogurt bites have a peanut butter center and a crunchy chocolate coating. Since unsweetened vegan yogurt is used you can control how much sweetener goes into these.

- Vegan yogurt: I used unsweetened coconut yogurt because I like to control the amount of sweetener. You could also use vegan plain Greek yogurt, vegan vanilla yogurt, or your favorite yogurt.
- Peanut butter: I used all-natural peanut butter. You could also use shelf-stable peanut butter.
- Maple syrup: Adds sweetness. You could also use agave syrup or another liquid sweetener.
- Vanilla extract: Enhances the flavors.
- Salt: Enhances the sweetness. I like to use sea salt.
- Semi-sweet chocolate chips or dark chocolate baking chunks: For the hard chocolate shell.
- Coconut oil: Makes the chocolate smooth and silky. You could leave it out.

๐ช Instructions
Step 1: Add vegan yogurt, maple syrup, vanilla extract, and salt to a large bowl.
Step 2: Mix until smooth and creamy.
Step 3: Pour the peanut butter mixture into an ice cube tray or silicone molds. Freeze until solid.
Step 4: Place chocolate in a heat-proof bowl over a saucepan with a couple of inches of water. (If you have a double boiler, use that.)
Step 5: Melt chocolate chips on medium heat until all the lumps are gone.
Step 6: With a fork, dip each frozen peanut butter bite into the melted chocolate.
Step 7: Place each yogurt bite on parchment paper. Place in an airtight container and freeze.
๐ญ Tips
- When melting the chocolate, watch over it. Do not heat it too long or let water touch it - both will cause it to seize up.
- You can microwave the chocolate in a microwave-safe bowl at 30-second intervals instead of heating it on the stove. It can also seize up in the microwave if you heat it too long.
- No fancy equipment is needed (like silicone molds), instead you can use an ice cube tray.
- Make sure the peanut butter bites are completely frozen before dipping them into the melted chocolate.
- A fork works well to dip the yogurt bites into the chocolate so that the excess chocolate will drip off into the bowl.

Chocolate Covered Peanut Butter Frozen Yogurt Bites
Equipment
- Ice cube tray
Ingredients
Peanut butter filling
- 1 cup unsweetened coconut milk yogurt
- ยผ cup + 2 tablespoons peanut butter
- 3 tablespoons maple syrup
- ยฝ teaspoon vanilla extract
- Pinch salt
Chocolate coating
- ยพ cups chocolate chips
- 1 ยฝ tablespoons coconut oil
Instructions
Peanut Butter Filling
- Mix peanut butter filling ingredients. Pour 2 tablespoons in each ice cube slot of an ice cube tray. Freeze until solid.
Chocolate Coating
- Heat a couple of inches of water in a saucepan or double boiler over medium heat. Place chocolate chips and coconut oil in a heat-safe dish over the saucepan. Stir to combine. Remove from the heat when there are no more lumps of chocolate. Don't cook it too long or let it touch any water or it will seize up and get hard.
- With a fork, dip a peanut butter yogurt bite into chocolate. Place on a parchment lined tray. Repeat with each yogurt bite. Freeze.

Just substituted โ0โ fat Greek yogurt and used honey roasted peanut butter freshly ground with the maple syrup. Used semi sweet chocolate melted transferring the chocolate by the spoonful over the cluster from one bowl to another and dusted the clusters with ground peanuts. Also did cut banana bites in chocolate with dusting of peanuts for a banana split tasty bite!
