Ingredients

cup
gluten-free rolled oats
½
cup
soy milk

tablespoon
maple syrup
½
teaspoon
vanilla extract
Pinch
salt

tablespoons
sweetened condensed coconut milk
1
tablespoon
peanut butter
2
tablespoons
chopped roasted and salted peanuts
2-3
tablespoons
chocolate chips
½
teaspoon
coconut oil
Instructions
Add rolled oats, soy milk, maple syrup, vanilla extract, and salt to a mason jar. Stir and let sit overnight.
Mix sweetened condensed coconut milk and peanut butter in a small bowl.
Layer peanut butter mixture over the top of the overnight oats.
Melt chocolate chips in a microwave at 30-second intervals. Add coconut oil. Stir.
Pour chocolate over the top of the overnight oats. Place in the freezer to harden, if desired.
Pour chopped peanuts on top.
Notes
This recipe will last about 3 days in an airtight container in the fridge.
