These Snickers Overnight Oats are a fun treat. Made with a sweet rich peanut butter mixture, a chocolate layer, and crunchy peanuts.
The peanut butter mixture is made with sweetened condensed coconut milk and peanut butter. The mixture is one I've used quite a few times in different recipes because it is so decadent.

- Rolled oats: Rolled oats (old-fashioned oats) work best for overnight oats. I used gluten-free rolled oats. They get soft enough while not being too mushy. You could use quick oats, but you won't have as much texture. You could also use steel-cut oats. If you do you'll want to soak them for the full 8 hours or more. You'll have more texture than rolled oats.
- Soy milk: You can use vanilla almond milk, oat milk, cashew milk, coconut milk, or any dairy-free milk.
- Pure maple syrup: Adds sweetness. You could also use agave syrup, brown sugar, coconut sugar, or your favorite sweetener.
- Vanilla extract: Adds vanilla flavor.
- Salt: Enhances sweetness. I like to use sea salt.
- Sweetened condensed coconut milk: Adds a sweet rich flavor. You could also use sweetened condensed oat milk.
- Peanut butter: Adds peanut flavor.
- Peanuts: I used roasted and salted peanuts.
- Chocolate chips: Adds the chocolate flavor. You could also use dark chocolate baking chunks.
- Coconut oil: Makes the chocolate smooth and helps it harden. You could leave it out.

Step 1: Combine the rolled oats, soy milk, maple syrup, vanilla extract, and salt in a mason jar. Stir and add the lid. Place in the fridge and let sit overnight.
Step 2: Add sweetened condensed coconut milk and peanut butter into a small bowl.
Step 3: Stir until smooth and creamy.
Step 4: Layer peanut butter mixture on top of overnight oats.
Step 5: Melt chocolate chips in the microwave at 30-second intervals until melted. Add coconut oil. Stir. Spoon on top of the peanut butter mixture.
If you prefer a hard chocolate coating, place the jar in the freezer to harden for 30 minutes or so. Sprinkle chopped peanuts on top.

Overnight oats don't have to sit all night. You can make them in about 3 hours if you don't want to wait. Letting the oats sit overnight allows the oats to soak up the liquid and soften up.
Yes, overnight oats need to be refrigerated. Place them in an airtight container, like a mason jar with a secure lid in the fridge overnight.

Snickers Overnight Oats
Ingredients
- ยฝ cup gluten-free rolled oats
- ยฝ cup soy milk
- 1 tablespoon maple syrup
- ยฝ teaspoon vanilla extract
- Pinch salt
- 2 tablespoons sweetened condensed coconut milk
- 1 tablespoon peanut butter
- 2 tablespoons chopped roasted and salted peanuts
- 2-3 tablespoons chocolate chips
- ยฝ teaspoon coconut oil
Instructions
- Add rolled oats, soy milk, maple syrup, vanilla extract, and salt to a mason jar. Stir and let sit overnight.
- Mix sweetened condensed coconut milk and peanut butter in a small bowl.
- Layer peanut butter mixture over the top of the overnight oats.
- Melt chocolate chips in a microwave at 30-second intervals. Add coconut oil. Stir.
- Pour chocolate over the top of the overnight oats. Place in the freezer to harden, if desired.
- Pour chopped peanuts on top.
