Vegan Burrito Bowl

This healthy Vegan Burrito Bowl is better than take-out. Made with a Creamy Avocado Green Sauce. Customize it to your liking by switching out the veggies or sauce. There's no need to order an overpriced burrito bowl when it is so easy to make it yourself!

Ingredients

  • 2 cups cooked rice - follow directions on package
  • 1 cup spicy black beans or regular black beans
  • 1 cup corn
  • 1 cup chopped red pepper, raw or steamed
  • 1 cup chopped tomato
  • 2 avocados, chopped
  • Salt and pepper, as needed*

Creamy Avocado Green Sauce

  • 1/2 cup tomatillo salsa
  • 1/2 cup unsweetened plain coconut milk yogurt
  • 1/4 cup mashed avocado

Instructions

  • Creamy Avocado Green Sauce: Mix all ingredients.
  • Vegan Burrito Bowls: Divide rice between four bowls. Top with the rest of ingredients. Top with Creamy Avocado Green Sauce.

Notes

If you are using kalamata olives and spicy black beans, you won't need much salt and pepper, if any.
Other toppings you might like: Vegan Chipotle Ranch Dressing, Guacamole, Pico de Gallo, or Vegan Sour Cream.
