Hi, I am Willow Moon. I am the recipe developer, author, and photographer at Create Mindfully. I create easy vegan gluten free recipes that the whole family will love.

I have been vegan since 1999. I am also gluten free because I have a gluten intolerance, but the recipes on this website can easily be made with wheat products.

Before starting Create Mindfully, I was an elementary school teacher. There were many days I had little energy to spend much time in the kitchen.

I struggled with overwhelm around dinnertime. Many times, I reached for frozen dinners or unhealthy choices because I didn't have a plan in place.

I had too many other things on my mind to have the bandwidth to worry about dinner every single night.

Since becoming a food blogger, I started planning out meals ahead of time, mainly out of necessity that comes with the job. I noticed that I was not only was less stressed around dinnertime, but I was saving money and wasting less food.

My goal in creating these Vegan Meal Plans is to provide an easy-to-follow weekly plan so you don't have to scroll endlessly looking for recipes or spend time creating a shopping list.

What are the recipes like?

A typical week would include Vegan Lentil Skillet Lasagna, Vegan Enchilada Bowl, Vegan BLT with Avocado, Caramelized Onion and Mushroom Pasta, and Baked Tofu Nuggets.

Another week might be Avocado Pesto Grilled Cheese, Ginger Hoisin Tofu, Tempeh Avocado Wrap, Tahini Noodles, and Spicy Tofu Tacos.

Nope. You can find all the ingredients at your local grocery store or online, and I offer shopping tips in the ebook to help save money on groceries.

Do I need any special kitchen equipment?

No, just your average kitchen equipment, like a food processor and blender.

Are all the recipes gluten-free and nut-free?

Since I am gluten intolerant all the recipes are gluten free. If you are not gluten free, you could use your favorite bread, all-purpose flour, and pasta. There are a couple of recipes with nuts.
