    Hi, I am Willow Moon. I am the recipe developer, author, and photographer at Create Mindfully. I create easy vegan gluten free recipes that the whole family will love.

    I have been vegan since 1999. I am also gluten free because I have a gluten intolerance, but the recipes in this ebook can easily be made with wheat products.

    Before starting Create Mindfully, I was an elementary school teacher. There were many days I had little energy to spend much time in the kitchen.

    Quick and easy vegan recipes helped me to get healthy dinners on the table fast when I worked 40-50 hours a week as a teacher.

    Having some go-to 30 minute vegan meals was a game changer.

    My goal in creating this ebook is to provide a resource for busy people who want to get flavorful food on the table fast.

    My hope is that these recipes give you the same sense of relief, joy, and "I can do this" confidence that they gave me when life was hectic.

    No, you just need a computer, tablet, or smartphone.

    How many people do the recipes serve?

    The majority of the recipes serve 4 people, but the recipes can easily be adjusted.

    Are the ingredients expensive or hard to find?

    Nope. You can find all the ingredients at your local grocery store or online, and I offer shopping tips in the ebook to help save money on groceries.

    Do I need any special kitchen equipment?

    No, just your average kitchen equipment, like a food processor and blender.

    Are all the recipes gluten-free and nut-free?

    Since I am gluten intolerant all the recipes are gluten free. If you are not gluten free, you could use your favorite bread, all-purpose flour, and pasta. There are a couple of recipes with nuts.

    Can I change the weekly meal plan?

    Yes, and I've made it easy to do so by the way I organized the weekly shopping lists.
