About Me

Hi, I am Willow Moon. I am the recipe developer, author, and photographer at Create Mindfully. I create easy vegan gluten free recipes that the whole family will love.
I have been vegan since 1999. I am also gluten free because I have a gluten intolerance, but the recipes in this ebook can easily be made with wheat products.
Before starting Create Mindfully, I was an elementary school teacher. There were many days I had little energy to spend much time in the kitchen.
Quick and easy vegan recipes helped me to get healthy dinners on the table fast when I worked 40-50 hours a week as a teacher.
Having some go-to 30 minute vegan meals was a game changer.
My goal in creating this ebook is to provide a resource for busy people who want to get flavorful food on the table fast.
