    Hi, I am Willow Moon. I am the recipe developer, author, and photographer at Create Mindfully. I create easy vegan gluten free recipes that the whole family will love.

    I have been vegan since 1999. I am also gluten free because I have a gluten intolerance, but the recipes in this ebook can easily be made with wheat products.

    Before starting Create Mindfully, I was an elementary school teacher. There were many days I had little energy to spend much time in the kitchen.

    Planning out some my week with some easy vegan recipes helped me to get healthy dinners on the table fast when I worked 40-50 hours a week as a teacher.

    It's also saved me a ton of money cooking my meals at home.

    My goal in creating this ebook is to provide a resource for busy people who want to get flavorful food on the table fast while saving at the checkout.

    I hope you love the recipes as much as I loved creating them!
