About Me

Hi, I am Willow Moon. I am the recipe developer, author, and photographer at Create Mindfully. I create easy vegan gluten free recipes that the whole family will love.
I have been vegan since 1999. I am also gluten free because I have a gluten intolerance, but the recipes in this ebook can easily be made with wheat products.
Before starting Create Mindfully, I was an elementary school teacher. There were many days I felt rushed to make a healthy breakfast and get out the door.
Easy and make-ahead vegan breakfast recipes helped me to start my day off with a healthy breakfast when I worked 40-50 hours a week as a teacher.
Having some go-to easy breakfast recipes was a life-saver.
My goal in creating this ebook is to provide a resource for busy people who want to start their day with a healthy breakfast without spending much time in the kitchen.
