About Me

Hi, I am Willow Moon. I am the recipe developer, author, and photographer at Create Mindfully. I create easy vegan gluten free recipes that the whole family will love.
I have been vegan since 1999. I am also gluten free because I have a gluten intolerance, but the recipes in this ebook can easily be made with wheat products.
Before starting Create Mindfully, I was an elementary school teacher. There were many days I had little energy to spend much time in the kitchen.
Quick and easy vegan recipes helped me to save hundreds of dollars and get healthy meals on the table fast when I worked 40-50 hours a week as a teacher.
Having some go-to easy vegan meals was a game changer.
My goal in creating this bundle is to provide a resource for busy people who want to get healthy flavorful food on the table fast while saving money on grocery bills.
