Hi, I am Willow Moon. I am the recipe developer, author, and photographer at Create Mindfully. I create easy vegan gluten free recipes that the whole family will love.
I have been vegan since 1999. I am also gluten free because I have a gluten intolerance, but the recipes in this ebook can easily be made with wheat products.
Before starting Create Mindfully, I was an elementary school teacher. There were many days I had little energy to spend much time in the kitchen.
I loved having some comforting recipes that I could make after a stressful day at work.
My goal in creating this ebook is to provide a resource for people who want a variety of easy recipes.
