About Me
Hi, I am Willow Moon. I am the recipe developer, author, and photographer at Create Mindfully. I create easy vegan gluten free recipes that the whole family will love.
I have been vegan since 1999. I am also gluten free because I have a gluten intolerance, but the recipes in this ebook can easily be made with wheat products.
Before starting Create Mindfully, I was an elementary school teacher. There were many days I had little energy to spend much time in the kitchen.
Making mix-and-match vegan recipes became one of my favorite ways to cook.
It allows me to make a grain to use for several meals while changing up the flavors. I love to create a variety of meals just by switching up the sauce, grain, or protein, and supplement with store-bought shortcuts to make things even easier.
My goal in creating this ebook is to take the guesswork out of dinner meal planning and provide versatile recipes that adapt to your needs.
