These quick Sugar Free Pickled Peppers and Onions are perfect for tacos, sandwiches, or whatever you like!

When life gives you peppers, make quick Sugar Free Pickled Peppers and Onions! That's exactly what I did after receiving a large box of serrano peppers from a local organization called Market on the Move, where you get up to 60 lbs. of produce for $10.
The serrano peppers were either going to become pickled peppers or hot sauce, and I was more in the mood for pickled serrano peppers.
Since I don't use sugar very much, I decided to make these sugar-free by using erythritol. You would never know by tasting these that they are sugar-free. They are sweet and spicy.
Don't let the weird name fool you, erythritol is all-natural. It occurs naturally in some fruits and fermented foods. It is low-carb and has zero calories.
I used serrano peppers, but you could use a less spicy pepper like jalapeño if you prefer. About a month after making these, I was gifted with some habanero peppers, which are even spicier than serrano peppers. I pickled them as well since there were so many of them.
Even though I like spicy foods, the habaneros were way too hot for me. So that they don't go to waste, I like to put them in my drinking water. It soothes my sore throat that I have had since allergy season started.
Quick pickled peppers make a great addition to tacos, which I used them in. I will be posting that recipe in the next week or two. They also work well in sandwiches like Spicy Tofu Bánh Mì or topped on Loaded Vegan Nachos.

🧾 Ingredients

- Peppers: When I first published this recipe I used serrano peppers. When I updated this recipe I used jalapeños, which aren't as spicy. Use your favorite peppers.
- Garlic
- Onion: I used a yellow onion. You could use a sweet onion or red onion.
- Sugar-free sweetener or sugar: When I first published this recipe I used erythritol, but since I have a corn intolerance, I used sugar when updating it.
- Salt: Enhances flavors. I used sea salt.
- Distilled white vinegar (5% acidity): Is the least expensive option. You could also use apple cider vinegar.
- Water

🔪 Instructions

Step 1: Add water, vinegar, and sweetener to a saucepan. Bring to a boil, then reduce to a simmer. Heat for 5 minutes, or until sweetener is dissolved.

Step 2: Pour mixture into a mason jar with sliced onions and peppers. Let cool before refrigerating.

Sugar Free Pickled Peppers and Onions
Ingredients
- 8 ounces serrano peppers, sliced (approx. 24)
- 1 cup sliced onions
- 2 cloves garlic minced
- 1 ½ cups distilled white vinegar (5% acidity)
- 1 ½ cups water
- ¾ cup erythritol (or sugar)
- Pinch salt
Instructions
- Put sliced peppers, onions, and garlic in a mason jar.
- Combine vinegar, water, erythritol, and pinch of salt in a pan. Bring to a boil, then simmer 5 minutes, or until erythritol is dissolved. Pour over peppers, onions, and garlic, and cover completely. Let cool and refrigerate.

Can the erythritol be omitted or replaced with honey?

I have never tried it but have seen many pickling recipes with honey, so it should be fine. You could also omit it.

How much sugar would I use if I wanted to substitute real sugar for the sugar substitute ??? lol

Hi Lee, erythritol is about 70% as sweet as sugar, so you need more erythritol to get the desired sweetness. I would start with about 1/2 cup sugar. You could even start with less, and taste it to see how you like it. You can always add more sugar but you can't take it away.
