This is a breakfast that tastes like dessert but is quite healthy. The kids will love it for breakfast or a snack.
Customize it to your liking. Add some chopped walnuts or pecans for some protein. You could also use vegan yogurt and some dairy-free milk in place of coconut milk.

- You can customize it to your liking. Add some chopped nuts or chia seeds for protein.

- Rolled oats: Rolled oats (old-fashioned oats) work best for overnight oats. I used gluten-free rolled oats. They get soft enough while not being too mushy. You could use quick oats, but you won't have as much texture. You could also use steel-cut oats. If you do you'll want to soak them for the full 8 hours or more. You'll have more texture than rolled oats.
- Coconut milk: I used full-fat coconut milk. Adds a thick creamy texture and wonderful coconut flavor. You could use any dairy-free milk you like.
- Banana: You can use a fresh banana or frozen.
- Pure maple syrup: Adds sweetness. You could also use agave syrup, brown sugar, coconut sugar, or your favorite sweetener.
- Shredded coconut: Adds a wonderful crunchy texture and more coconut flavor.
- Salt: Enhances sweetness. I like to use sea salt.

Step 1: Add coconut milk, rolled oats, maple syrup, and salt in a mason jar. Stir and let sit overnight.
Step 2: In the morning add sliced banana and shredded coconut.
How Long Do Overnight Oats Need to Soak?
Place them in the fridge for a minimum of 3-4 hours up to 72 hours.
๐ญ Tips
- You may want more liquid than I've listed. Start with the amount shown and check the consistency in the morning to see if you want more after it's been absorbed.
- For a low-fat version, use unsweetened coconut milk yogurt instead of coconut milk.
- Add the banana and shredded coconut right before you eat it so that they don't absorb the liquid.
How to Store
These banana overnight oats will last up to 3 days in the fridge.
How to Serve
You can eat these overnight oats straight from the fridge or heat them up if you wish. To heat them, remove the lid and microwave at 30-second intervals until warmed to your liking.

Banana Cream Pie Overnight Oats
Ingredients

- ยฝ cup full fat coconut milk (in a can)
- 1 banana sliced
- 2 tablespoons shredded coconut
- 1 tablespoon maple syrup

Instructions

This was AMAZING!!! I used lactose free milk and topped it with a splash of Sweet Cream creamer. I also added about half a teaspoon vanilla. For time purposes, I mixed in the banana and coconut last night!! I ate it ALL!!! Tastes Amazing and so easy!!!
